Most popular Shallot with chefs.
It has a nice raw taste and cooks to a delicious light flavor. Not as productive
as the Dutch Yellow Shallot.

Greeley Shallot (Early)
An Heirloom Red Shallot from the Greeley, Colorado area. Brought to the area
more than a Century ago! A very productive member of the Onion Family, sure to add
a wonderful, yet mild flavor to salsas and salads. This is the smallest shallot
we grow; being mostly medium in size. We use this shallot raw whenever
a mild, crunchy onion taste is needed. 2008 Harvest Note: Greeley sprouted 30 to 40 days earlier than all our other Shallots. Harvest was also earlier by a month. The name has now been changed to "Greeley Shallot (Early)". 2009
